Butternut Squash Gnocchi (Gluten-Free & Gut-Friendly)

A nourishing, anti-inflammatory twist on classic gnocchi, made with butternut squash, sweet potato, and cassava flour for a grain-free, gut-friendly, and naturally sweet flavor. Perfect for cozy meals while supporting digestion and overall wellness!


Ingredients (Serves 6-8)

½ large butternut squash (rich in beta-carotene & fiber)

1 large sweet potato (supports gut health & provides complex carbs)

2 cups cassava flour (grain-free & easy to digest)

1½ tsp salt

½ tsp black pepper

2 tbsp minced garlic (immune-boosting & anti-inflammatory)

2 tbsp olive oil (healthy fats & heart-protective)

Fresh sage leaves (aromatic & aids digestion)


Instructions


Roast the Vegetables

  • Preheat oven to 425°F (220°C).

  • Cut butternut squash and sweet potato in half, drizzle with olive oil and salt, and place face-down on a lined baking sheet.

  • Roast for 20-30 minutes, or until fork-tender.


Blend & Remove Moisture

  • Scoop out the roasted squash and sweet potato, discard the skins, and place in a food processor with garlic and salt. Blend until smooth.

  • Transfer to a pot over medium heat and stir for 5-7 minutes to remove excess moisture.


Cool & Form the Dough

  • Allow the mixture to cool completely in the fridge.

  • In a bowl, mix in cassava flour, ¼ cup at a time, until the dough is soft but not sticky.


Shape the Gnocchi

  • Divide dough into 6 equal portions and roll each into a long, thin rope.

  • Cut into ½-inch pieces and lightly press with a fork to create ridges.


Cook & Sauté

  • Bring a pot of salted water to a boil.

  • Add gnocchi and boil until they float (about 2 minutes).

  • In a separate pan, heat olive oil and sage leaves until fragrant.

  • Toss the gnocchi in the sage-infused oil for a crispy, golden finish.


Serve & Enjoy!

Plate the gnocchi, garnish with extra crispy sage leaves, and savor a naturally sweet, comforting dish! Pair with grilled chicken and a side salad for added protein and fiber.
