Baked Blueberry Date Bars (Gluten-Free, Dairy-Free, Refined Sugar-Free)

These naturally sweetened Baked Blueberry Date Bars are packed with fiber, antioxidants, and healthy fats—perfect for a wholesome snack or breakfast on the go!


Ingredients

25 pitted Medjool dates (soaked in hot water for 15 minutes)

¾ cup fresh or frozen blueberries

2 tbsp almond or cashew butter

2 egg whites (or flax eggs for a vegan option)

½ tsp vanilla extract

¾ cup coconut flour

Pinch of sea salt

Avocado oil (for greasing the baking pan)

Optional toppings: Chopped nuts, dairy-free chocolate chips, coconut flakes


Instructions

Preheat the oven to 350°F (175°C). Grease an 8x8-inch baking pan with avocado oil.

Soak the dates in hot water for 15 minutes until soft. Drain and transfer to a food processor.

Blend the soaked dates, blueberries, nut butter, egg whites, vanilla extract, coconut flour, and salt until a thick batter forms.

Spread the batter evenly into the prepared baking pan.

Bake for 18-22 minutes, or until the edges are golden and the bars feel firm.

Cool completely before slicing.

Top as desired with nuts, chocolate chips, coconut flakes, or a drizzle of dairy-free ice cream or coconut yogurt.


Storage Tips

Store in an airtight container at room temperature for 2 days or in the fridge for up to one week.

Freeze for up to 3 months—just thaw before enjoying!
